Sweet Dishes


 Rice Kheer (Rice and Milk Pudding)

This is a delicious pudding made in our family on special occasions especially on Diwali. Everybody loves this preparation. It is made by stewing Basmati rice in milk slowly over a low fire. This is the recipe.


Ingredients

Basmati rice (preferably broken)         62 gms

Milk                                                        1 liter

Sugar                                                     to taste

Cashews                                                2 tablespoons

Almonds                                               2 tablespoons

Kishmish (Raisins)                               1 tablespoon

Cardamom crushed                               Half teaspoon


Preparation

Wash the rice and add it to the milk. Bring the milk to a boil and reduce the flame to the minimum. Leave the combination to simmer slowly with occasional stirring to prevent the milk from boiling over. 

Keep boiling till the desired thickness is reached. At least 15 minutes of boiling is required. Switch off the flame and add sugar to taste. 

Wash and chop the cashews and almonds. The raisins should be washed and soaked in water for about half hour. Add the dry fruits and crushed cardamom to the kheer one it has cooled slightly, about 15 minutes after removing from the flame.

Delicious kheer is ready !!
